ALTMS = Junmai × Matured at least 3 years
ALTMS means Authentic Long-Term Matured Sake. Junmai (純米) is a term which means sake is made from rice, water, and rice-malt (米麹) only. There is no additional ingredients nor colors. It needs to be matured at least 3 years for obtaining a better taste, texture, aroma and color. Those matured sake obtain a natural amber color which is quite different from newly brewed sake’s color.

About Us
Mature Inc. has lead and introduced Authentic Long-Term Matured Sake (ALTMS) to worldwide since 2021. Formerly founder’s ancestors and relatives had operated Sake business for over 80 years (closed on 2019), and the spirit has taken over to us. Mature Inc. has an official license from Japan Government (National Tax Agency) for distributing and retailing sake globally (License No. Honjo-99th).
